Induction range cookers use advanced electromagnetic technology to heat cookware directly rather than the hob surface. Beneath each cooking zone is a copper coil that generates a magnetic field when switched on. When compatible pans, usually stainless steel or cast iron, are placed on the zone, the field induces an electric current in the pan, heating it rapidly and evenly.
